[Q] Need Lollipop ROM Update Advice (noob) topic

Hi, I'm far from an experienced modder. I only root for hotspot tether, to eliminate Sprint bloat, and for certain apps that need it (like call recorder). I currently have the RODT ND2 4.4.2 ROM and want to find the least complicated way to get to a STABLE, rooted, official-ish version of Lollipop. I'm not looking of an adventure or to do this regularly.

Can anyone please advise:
  1. Which ROM would be least complicated to install? Will it support OTA updates or no?

  2. What's the best way to keep (or transfer) all my app data without corrupting things or having to reset every app?

  3. Any known issues I should watch out for in the upgrade process?
