[Q] Stock vs Any custom rom topic

How come the stock ROM from google is always more stable and smoother than any other custom ROM may it be cataclysm or optipop or cynogemod.
I mean from all the custom Roms I feel stock is more smoother and stable . why can the custom Roms be as smooth as the stock?
